We have a love of Mexican food at our house and pizza, so this month since our theme is pizza, the logical turn my mind took was to combine the two. Let me tell you, this is a dangerously delicious combination. I decided to use mini pizza crusts instead of 1 or 2 large crusts, but you can alter this to fit any size your family might need.
- 1 package 7″ mini pizza crusts (contains 3)
- 1 cup chicken breast, cooked and shredded (this is about 2 small chicken breasts)
- 1/2 cup salsa
- 1 teaspoon taco seasoning
- 1/2 cup shredded cheese
- Sour cream and shredded lettuce on the side.
Preheat oven to 350 degrees.
Cook chicken in whatever method you desire, let cool slightly and shred. Combine with salsa and taco seasoning in a small saucepan and cook over low heat for approximately 20 minutes. Let the chicken simmer to combine the seasoning. Remove from heat and cool.
Lay out pizza crusts on cookie sheet according to package directions. Divide the shredded chicken evenly among the pizza crusts. Spread out evenly. Top with the 1/2 cup cheese divided evenly over the pizza crust.
Place in the oven and bake according to the package directions for the crust. Remove from oven and serve with a dollop of sour cream and shredded lettuce. Makes 3 servings.
