I know you are thinking….. another oatmeal cookie recipe?

Yes, but this is Steve’s recipe! ūüôā

My husband has perfected this oatmeal cookie recipe after years of experimenting. From the crispy crunch on the outside to the chewy goodness inside – they are simply delicious and addicting.¬†The secret is in the coconut. It’s a match made in heaven. Give the recipe a try and let me know what you think.

Steve’s Favorite Oatmeal Cookies
Preheat oven to 350 degrees

Gather the following ingredients:

  • 1 cube butter
  • 1/4 cup shortening
  • 1 cup brown sugar
  • 1/2 ¬†cup white sugar
  • 1 egg
  • 1¬† teaspoon vanilla
  • 1/3 cup water
  • 1 cup flour
  • 1 teaspoon salt
  • 1/2 teaspoon soda
  • 3 cups oats
  • 3/4 cup raisins
  • 3/4 cup coconut (packed tightly)
  • 1 cup chopped nuts – pecans or walnuts

Cream the butter and the shortening until mixed well, then blend in the brown and white sugar. ¬†Stir in the egg, vanilla and water, mixing well. ¬† Sift together the flour, salt and soda and add to the mix. Scrape the sides of your bowl to make sure all the good stuff incorporated into the cookie dough. ¬†Stir in the oats, raisins, coconut and chopped nuts. ¬†Avoid the urge to take a finger dip of cookie dough – or not! I know the raw egg thing but I’m just saying……….

On a lightly greased, or parchment covered, cookie sheet place 1/8 cup scoops a few inches apart (the husband’s recipe card does not say how far apart so use your baker’s judgement – even if they stick together… who cares? ¬†You can eat those first.)

Bake for 13 – 14 minutes or so, everyone’s oven is different. ¬†Cookies should still be a little soft to the touch on top – don’t overcook as they will crunch up a bit as they cool. ¬†For cookies that you have not made before consider baking just two so you get the time right on the rest of the batch. ¬†Since these are experimental you may eat them immediately!

This yields about 36 cookies. ¬†Aha, I suspect it’s more than we see in the cookie jar as they tend to get eaten by the cook about 3 minutes after they leave the oven.

I actually had two cookies and milk while trying to get a good picture. It’s hard to control yourself when you stare at cookies and milk. ¬†So while writing and then reading my post I ate another one and downed the milk. Shhh, don’t tell Steve!
