Spicy Roast Pork Stir-Fried Noodles

Love this easy and delicious dish that uses leftover roast pork. The secret to the great flavor is the fried noodles. Easy on the budget and the family will love it.

Spicy Stir-Fried Noodles with Pork
Serves 4

  • 1/2 pound leftover roast pork cut into thin strips (may use fresh pork strips browned in a little oil until tender and cooked through)
  • 4  cups of your favorite stir-fry vegetables that could include:
    sliced carrots, celery, mushrooms, green or red pepper and onions, chopped broccoli, pea pods
  • 12  ounces spaghetti or linguine noodles
  • 1/3 cup chicken broth
  • 6  tablespoons soy sauce
  • 3 teaspoons rice vinegar
  • 2 teaspoons toasted sesame oil
  • Pinch of sugar
  • 3 tablespoons vegetable oil
  • 1  tablespoon minced ginger (substitute ground ginger if necessary – equivalent is 1 teaspoon)
  • Hot Chili Oil for drizzling

In a medium sized bowl combine the broth, soy sauce, vinegar, sesame oil and sugar.  Toss in your cooked pork strips and let marinate until needed.

In a saucepan of boiling water cook the noodles until al dente about 3 minutes – don’t overcook.  Drain and rinse.

While noodles are cooking prepare the vegetables as noted above.  In a large fry-pan add 1 tablespoon of oil, heat to medium-high and brown the onions then add the remaining vegetables and cook until just crisp tender. Remove from the fry pan and set aside.

Assemble and finish! Heat the remaining 2 tablespoons of vegetable oil in the fry pan to medium high, until the oil begins to sizzle. Add the well-drained noodles and stir fry until lightly browned, toss in the cooked veggies and the marinated meat and remaining sauce, add ginger.  Fry another 2 minutes or so until heated through and serve in bowls.

If you like spicy, drizzle on a little hot chili oil.  Add more as needed!!

I like to serve spicy stir-fry with a small dish of icy-cold mandarin oranges and pineapple chunks.  Fresh and  light and cuts the grease and heat of the noodles.
