Shortcake and strawberries are one of my favorite desserts, so simple yet so satisfying. While I enjoy making more exotic sweet treats, I love the simple goodness and familiarity of a good shortcake. 

When in a hurry I may buy the little sponge cakes at the grocery store but I prefer a tender, homemade shortcake. It is the best compliment to the fresh sweetness of the strawberries and the richness of the cream.

Shortcake and Strawberries

Preheat the oven to 425 degrees.  Grease and flour an 8 inch round cake pan.

2 1/4 cups of all purpose flour
2 tablespoons sugar plus a little more to shake on the strawberries
4 teaspoons baking powder
1/4 teaspoon salt
1/3 cup shortening
2/3 cup milk
2 cups whipped heavy cream
3 pints of fresh strawberries

In a medium bowl combine the flour, baking powder, the sugar and the salt.  With a pasty blender cut in the shortening until the mixture resembles coarse crumbs. Make a well in the center and add the beaten egg and milk. Stir until just combined.

Spread the batter in the prepared pan and bake at 425 degrees for 15 – 20 minutes or until golden brown.  Let cool in the pan on a wire rack.

To serve, cut each piece in half making two layers.  Arrange the layers on a plate and top with the fresh strawberries.  I always shake on some sugar and then add the whipped cream.  Oh yum!
