A soft, chewy peanut butter cookie loaded with flavor.
- 1/2 cup butter, softened
- 1/2 cup peanut butter
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 teaspoon vanilla
- 1/2 cup all-purpose flour
- 1/4 cup quick cooking oats
- 1/2 teaspoon baking powder
- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
Preheat oven to 350 degrees; line 2 cookie sheets with parchment paper.
In a large bowl, add and mix together first five ingredients. Add remaining dry ingredients and mix thoroughly.
Using a dining sized tablespoon, drop onto prepared cookie sheets – about 3 inches apart.
Bake for 10 – 12 minutes until set, not hard. Serves 16
