French Toast 2

Peanut Butter and Jam French Toast is a great alternative to the original French Toast. Why not surprise the family with something new for breakfast? It’s easy to make and even the kids can get involved!

PB & J French Toast

3 cups frozen mixed berries
1/4 cup sugar
3 large eggs
1 1/2 cups milk
8 slices of bread
1/2 cup peanut butter
1/4 raspberry jam
1/4 cup roasted, salted peanuts, chopped and another 2 tablespoons for garnish
2 tablespoons of butter

1) Combine the frozen berries and sugar with 1/2 cup water and bring to a boil over medium-high heat.  Reduce heat a little and simmer, stirring occasionally, until slightly thickened, 10 minutes or so.

2) In a large baking dish, beat the eggs with the milk.

3) Spread the peanut butter on four slices of the bread and sprinkle with the chopped nuts. Spread the raspberry jam evenly on the other four slices and put them together.

4) Heat a large griddle with 1 tablespoon of the butter.  Dip the sandwiches in the egg mixture until well coated.  Cook on the griddle over moderate heat until nicely browned.  Add the other tablespoon of butter to the pan and flip the sandwiches to brown on the other side. YUM!

5) Transfer to the plates and spoon on a generous amount of the mixed-berry sauce and a few chopped nuts.

What now?

Stand back and watch them gobble this up!

You can switch it up by using almond butter and chopped almonds or maybe add a hint of chocolate peanut butter with strawberry jam. Have fun and let your imagination go wild! We would love to have your share your ideas.
