Peach Custard Pie

Peach custard pie in April is such a delight. It makes me think of summer and bountiful fresh fruit.

Sadly, store-bought fresh peaches are not in season and my home-canned fruit has been eaten, so I used canned peaches.

Gasp! I hear the thud of my blogger foodie friends fainting to the floor.  Haha…. kidding…kind of.

I’ll just spill the news right now – I love canned peaches. Any time I please I can whip up a quick, juicy snack, or a last-minute cobbler or even for a delicious peach custard pie.

So don’t be afraid of the canned variety. This peachy dessert is easy and yummy, so give it a try!

Whole pie

Peach Custard Pie
Serves 8 (It only serves 4 – 6 around here if you need gargantuan pieces like we do)

Crust for 8 – 9 inch pie pan
1 cup + 2 Tablespoons flour
1/2 tsp. salt
1/3 cup cold shortening or butter.
1/3 cup cold water (may need a tad more or less)

3 cups fresh peaches (5 or so) or 45 ounces of canned peaches in light syrup drained well
1 cup + 3 Tablespoons sugar
1 Tablespoon butter
3 Tablespoons flour
2 large eggs (if eggs are smallish throw in another one)

Preheat oven to 375 degrees.

Prepare the crust. Add the salt to the flour and mix. Cut in the cold shortening or butter until crumbly and using a fork add the cold water until the dough begins to form. You don’t want it wet or overworked. On a floured surface shape into a ball and roll out to 12 inches.  Roll the dough over your rolling pin and center over your pie plate, Carefully lay dough in place. Crimp edge and put in fridge until ready to use.

Prepare Filling. Toss peaches with 3 Tablespoons sugar and let stand 5 minutes.  In blender add eggs, butter, flour and remaining 1 cup sugar, blend until smooth. Stir egg mixture into peach mix and pour into pie shell.  Bake 50 – 55 minutes or until filling is just set and top is lightly browned.  Cover the edge of the crust if it begins browning too much, which can happen when using butter.

Cool on a wire rack, Chill in fridge for one hour before serving. You can take a forkful if you want at any time. Just blame it on someone else. 🙂

That’s it! Now before anyone else knows it’s ready to eat cut a big giant slice and go into the closet and savor every bite. Do not open the door when they knock.
