Orange and date muffins

For the past week, it seems as if I haven’t been able to sit down to a normal breakfast. I love having eggs, turkey bacon, toast, and a tall glass of oj as much as possible. However, it doesn’t work out that way sometimes.

Life takes over along with the diaper changes, bottle feedings, laundry, homework, and blogging so I often forget to grab a bite to eat. By the time I get around to eat it’s close to lunch, I’m not sure what I want to eat, or I simply don’t feel like cooking.

I knew I needed something that I could grab on the go or just as a quick snack. That’s where these little beauties come into the picture. They’re tasty and bite size. What a great combination! Enjoy!

Serve these wonderful orange date muffins for brunch!


1 Cup Flour
½ Tbsp. Baking Powder
¼ Cup Sugar
¼ Cup Dates, Chopped
¾ Tsp. Salt
3 Eggs Whites
1 Cup Vanilla Soy Milk
¼ Cup Canola Oil
1 Tbsp. Orange Juice
2 Tsp. Orange Zest
¼ Tsp. Orange Extract


Preheat oven to 400° F. Line a 24-cup mini muffin pan with mini cupcake liners. In a large bowl, combine flour, baking powder, sugar, dates, and salt. In a medium bowl, mix eggs, milk, oil, juice, 1 tsp. zest, and extract. Mix flour and egg mixture thoroughly. Drop batter into pan cups by the tablespoon. Sprinkle tops of batter with remaining zest. Bake for 10 minutes or until muffin tops pop back up when pressed lightly. Let muffins cool before serving.
