Orange and Date Breakfast Muffins

Tasty, bite-sized delicious muffins


  • 1 cup Flour
  • 1/2 Tablespoon Baking Powder
  • 1/4 cup Sugar
  • 1/4 cup Dates, chopped
  • 3/4 teaspoon Salt
  • 3 Egg Whites
  • 1 cup Vanilla Soy Milk
  • 1/4 cup cup Canola Oil
  • 1 Tablespoon Orange Juice
  • 2 teaspoons Orange Zest
  • 1/4 teaspoon Orange Extract


Preheat oven to 400° F.

Line a 24-cup mini muffin pan with mini cupcake liners. In a large bowl, combine flour, baking powder, sugar, dates, and salt. In a medium bowl, mix eggs, milk, oil, juice, 1 tsp. zest, and extract. Mix flour and egg mixture thoroughly. Drop batter into pan cups by the tablespoon. Sprinkle tops of batter with remaining zest. Bake for 10 minutes or until muffin tops pop back up when pressed lightly. Let muffins cool before serving.
