Delicious moist and fragrant cake
- 2 cups flour
- 1 1/2 Tablespoons cornstarch
- 2 teaspoons baking soda
- 1 cup sugar
- 1/4 teaspoon each of nutmeg, cinnamon, allspice and cloves
- 1/4 teaspoon salt
- 1 cup nuts, chopped
- 1 cup raisins
- 2 pints homemade applesauce or the equivalent canned applesauce
- 1/2 cup vegetable oil
Heat the oven to 300 degrees F
Sift the flour, cornstarch, soda, spices and salt together. Add sugar and mix.
Stir together the applesauce and cooking oil and add to the dry ingredients along with the chopped nuts and raisins. Lightly mix until just blended (do not overstir).
Turn into a greased and floured 9 x 13 pan and bake 40 – 45 minutes or until cake tests done. To test for doneness inserted toothpick into the center of the cake — it should remain clean when removed.
Let cool. Serve with whipped cream or a spoonful of applesauce or apple butter.
