Easy Macaroons

I LOVE chewy, moist, not-too-sugary macaroons. I can find them just down the road from my home  at a tiny family-owned Danish bakery where Chef Fleming whips up his incredible cookies – just the way I like them. However, I always like to bake my own treats whenever possible.

Imagine my excitement, if you can without getting scared, when I was rummaging through a tall stack of magazines – now there is a shocker – when I came across Good Housekeeping and found this most excellent recipe.  The article credits the original recipe to Julee Rosso and Sheila Lukins from their The Silver Palate Cookbook, 1979.

I cannot believe it took…..doing the math in head….34 years to find me!   It’s so simple!  Best advice of the day…. hide some for yourself as once the crowd sniffs them out they will devour them. Don’t we all live with rabid people always looking for what we have made and tried to hide?  🙂

Here is the recipe with my personal touch:

1/3 c. all-purpose flour
2 1/2 c. flaked sweetened coconut
1/8 t. salt
2/3 c. sweetened condensed milk
1 t. vanilla extract
4 oz. milk and/or dark chocolate melted

  1. Preheat oven to 350 degrees and line a large cookie sheet with parchment paper or grease –  whichever you like.
  2. In large bowl stir together the flour, salt and coconut.  Add condensed milk and vanilla;  stir until well combined.
  3. Drop a large Tablespoon of batter about 1 inch apart onto cookie sheet (the recipe called for 1/4 c of batter but I wanted my smaller)
  4. Bake, 12 – 13 minutes for the smaller cookie or 15 – 17 minutes for the larger ones, until just golden on the bottom and transfer to a wire rack to cool.
  5. Melt chocolate – I always put a stainless bowl over a saucepan of simmering water.
  6. Decorate with the chocolate.

I tried to dip and swirl the cookies in the chocolate but that was ugly so I let the chocolate cool just a little and scooped it into a small freezer bag and cut a tiny slit in the corner to pipe the not-so-bad stripes.

Let stand until set and then hurry and eat a couple before your family comes to ravage the rest.  If you have any left store them in an airtight container and they will stay wonderfully chewy and delish!

  3. The Silver Palate was one of the first cookbooks I owned that departed from the standard Betty Crocker format. I loved that cookbook, and now I’m going to have to go hunting for it.
