Having a sweet tooth during the middle of a diet is no good. You want something sweet and tasty, but you don’t to make a whole cake that will last you for days. Having a cake around may be tempting, just enough to ruin your diet.
I’m in that same situation. I wanted a dessert, but I didn’t want to make one that I can eat everyday. I wanted to satisfy my sweet tooth, but not go back for seconds. I also didn’t want to spend all day in the kitchen just for a small piece of happiness. That’s when I made this yummy microwave cake with less than a three minute cook time.
¼ Cup Flour
1 Tsp. Granulated Sugar
½ Tsp. Baking Powder
Pinch of Salt
2 Tbsp. Vanilla Soymilk
½ Tbsp. Butter, Cold
Mixture of ¼ Cup Brown Sugar and 1 Tsp. Cinnamon (Set aside in a bowl)
3 Tbsp. Brown Sugar
1 ½ Tbsp. Butter
½ Tsp. Cinnamon
¼ Tsp. Vanilla Extract
In a small bowl, mix flour, granulated sugar, baking powder, and salt. Add milk and butter to mixture and stir until soft dough is formed.
Roll dough in brown sugar and cinnamon mixture, while folding the dough to distribute mixture throughout dough.
Lightly grease a large ceramic mug with butter and place dough into mug. Microwave for 1 ½ minutes. Check dough and if too soft, microwave for 30 more seconds. Continue microwaving until cake is thoroughly cooked, but still soft.
Let slightly cool and remove cake from mug by lightly shaking the mug from side to side. Once cake is loose, turn over onto a plate. Turn the flat-side down on plate.
For glaze, in a small microwavable bowl, heat brown sugar, butter, cinnamon, and extract for 20 seconds. Remove from microwave and stir until butter is completely melted. Pour glaze over warm cake. Serve cake warm.
