Fresh growing organic basil

Basil is a member of the mint family.  With a bright and slightly sweet taste, it is a great addition to almost everything. Here are a few ideas for making this most of this versatile herb.

Prosciutto Sandwich with Basil and Avocado

Drizzle olive oil on your favorite hearty bread – ciabatta, french bread or pita.  Fill with prosciutto, sliced avocado and whole basil leaves.  I like to add a tiny splash of lemon for tartness.

Pasta with Roasted Veggies, Tomatoes and Basil

Toss diced eggplant and cherry tomatoes with olive oil, salt and pepper. Roast at 400 degrees until tender.  Toss with cooked penne and torn basil leaves.  Serve with a dollop of ricotta and drizzle with olive oil.

Watermelon, Basil and Feta Salad

Drizzle cut-up watermelon with olive oil and sprinkle crumbled Feta and torn basil leaves.  Season with salt and pepper.

Basil Aïoli

Chop fresh basil leaves and mix into mayonnaise with lemon juice to taste.  Serve with everything  – grilled shrimp, raw veggies, grilled pita wedges – endless possibilities.  You can also use this as a salad dressing base and drizzle in some oil olive to a creamy consistency.  Incredible!

Quick and Easy Basil Salad Dressing

I prefer fresh, homemade salad dressing.  Summer makes it easy with all the fresh herbs right outside my kitchen door.  Basil is my favorite for so many dishes but especially my homemade salad dressing!

Basil appetizer 1

In a small bowl mix together 1/8 teaspoon poupon mustard, juice of 1/2 small lemon, splash of good white vinegar (love Champagne vinegar), pinch of sea salt and black pepper.  Next I drizzle in 1/8 cup olive oil slowly, whisking to keep it nice and smooth.  Next comes 3 – 4 leaves of basil.  I use the back of a spoon to bruise the basil against the side of the bowl.  Adjust the seasonings and lemon/vinegar to your liking. You can serve with the basil or strained.  This makes enough for 2 good salads.

I drizzle this on everything –  fresh veggies, roasted veggies, turkey and smoked gouda sandwiches, pizza, warm pita bread, hummus, thick slices of tomatoes with mozzarella…… the possibilities are endless! Did I say I love this?

Keeps well in the refrigerator if you make extra.

Basil Lemonade

Create a simple syrup with 1/2 cup sugar and 1/2 cup water.  Heat to a boil, add 1 cup basil leaves, remove from heat, and let cool.  Add a splash of the basil syrup to lemonade (homemade is the best, find the recipe here) and garnish with the basil leaves.

  4. What great basil ideas! Our basil unfortunately did not fair so well this year. We had some wonky weather. Then it bolted way too early before we got too many uses out of it. Thanks for sharing!
