The Holiday Season is upon us and that means having good eats on hand to impress your guests. Here are five ideas to make your parties a smashingly great success!

To start, slice a baguette into 1/2″ diagonal slices.   Heat a large skillet with a teaspoon or two of olive oil and over medium-high heat let them sizzle on one side until the edges are brown – a minute or two. Alternatively, brush with oil olive and toast in a 350 degree oven.

Gorgonzola and Pear – top middle

This is one of my favorite combinations on or off the bread!  Let the cheese soften a bit at room temperature than spread onto the toasted bread. Top with the sliced pears, chopped toasted walnuts, a drizzle of honey and a little salt and pepper.

Goat Cheese and Sun Dried Tomato Pesto – top right

Spread room-temperature goat cheese onto the bread and top with a sun-dried tomato pesto.  I used the Bella Sun Luci Sun Dried Tomato Pesto Sauce with the pine nuts, which is so delicious.  It’s worth having on hand to just spoon onto a cracker, or mix into pasta salad or …….. it’s just one of my favorite foods to have around.  To finish the appetizer, garnish with fresh basil.

White Bean and Avocado – bottom left

Puree 1 can of cannellini beans and add the juice of half a lemon with a finely chopped clove of garlic, 1 teaspoon of olive oil and salt to taste. Spread on the toasts and top with thinly sliced avocado then drizzle a little olive oil on top and finish off with fresh-ground pepper.  To keep the avocado fresh while preparing be sure to splash on a little lemon juice.

Spicy Honey-Siracha Chicken – bottom right

This starts with a spread of mayonnaise on the bread followed by shredded rotisserie chicken.  It’s topped with a drizzle of sauce made from equal parts Siracha and honey.  Chopped cilantro finishes off this spicy and delicious appetizer.

After preparing the appetizers above I covered the final bread slice with layers of the pureed cannellini beans, topped with the pesto, than avocado followed by Gorgonzola cheese and a drizzle of olive oil!  It was a bit over the top but who can blame me?  It was incredible.
