Double Stuff Peanut Butter Cookie

Rolled peanut butter cookies with a peanut butter cream filling.


  • 1/2 cup peanut butter
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup margarine, softened
  • 1 whole egg, room temp.
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/2 cup ground oats
  • 1 1/2 cups all-purpose flour
  • 1/2 cup peanut butter
  • 3 Tablespoons margarine
  • 2 cups powdered sugar
  • 2+ Tablespoons milk
  • 1/2 teaspoon vanilla extract

* Special note – the ingredients listed above are for both the cookie dough and filling. The filling ingredients begin after the last cookie dough ingredient of all-purpose flour.

  1. In a large bowl, add peanut butter, margarine, sugars, egg, salt, and vanilla; beat with electric mixer on medium speed until fluffy. Add baking powder, ground oats, and flour; stir until thoroughly mixed. Refrigerate dough for 30 minutes.
  2. Preheat oven to 325 degrees.
  3. Remove dough from refrigerator. Roll out on lightly floured surface. Cut out cookies with cookie cutter and place on cookie sheets lined with parchment paper.
  4. Bake for approximately 9 – 11 minutes. Remove from oven and cool completely.
  5. In a large bowl, mix filling ingredients together blending thoroughly. Construct cookie sandwiches and store in airtight container. Makes about 2 dozen.
