Danish Cookies with Pernille Christmas 2012-2

Christmas is always a special time of year – but last year brought a overwhelming sense of gratefulness and endearing moments. Two things come to mind – feeling better health-wise after a complicated year and how incredibly fortunate we were to have a friend of my son (Andrew) stay with us for a week just prior to Christmas.

Andrew met Pernille while studying at the business school in Copenhagen, Denmark.  She was planning her exchange program to the US and met up with Andrew to talk about it – lucky us that they became good friends.

Pernille arrived shortly after Andrew came home from Denmark and she stayed with us until her dorm room was ready. It was wonderful to meet her and she was about as cute as can be – warm, friendly and just plain nice.  During the months she attended the university we got to visit with her several times – but the best part was when she stayed with us right before she went back to Denmark – which was the week before Christmas.

That week we decided to make some Danish cookies. Pernille got a hold of her mother and recorded four Danish cookie recipes – the same ones that she baked with her mother and sister each Christmas.  Andrew and Pernille collected all the ingredients.  The three of us also visited a small little Dutch shop to gather the remaining items.

It was so fun – original Danish cookies – with a original Dane – lots of laughter, and acting silly and yummy cookies – just a perfect time! Pernille, Andrew and I were joined by my sister Shawna, a dear friend of mine Georgia, along with my twin nephews Judson and Cooper (age 4) – wild, noisy and I love it!

Here are Danish cookie recipes that Pernille shared with me.  I believe that when she refers to ‘oc’ that is ounces. She mixed the batter for all the cookies, we all cut them out – I decorated them – and we all ate them! DELICIOUS.

Jødekager (Jewish-cookies)

  • 2.12 cups of plain white flour
  • ½  a teaspoon of Carbamate  (it affects the taste but normal baking powder can be used)
  • ½ teaspoon ginger.
  • Zest of a lemon.
  • 7 oc of butter
  • 4.4 oc of sugar
  • 1 egg

5 min at 392 F*

Pebernødder (pebbernuts)

  • 3.17 cups of flour
  • ½ grated nutmeg
  • 6.17 oc of butter
  • ½ teaspoon potash
  • 1.27 cups of powdersugar
  • 1 egg.

10 min. at 356 F*

Vanilje/Vanilie –kranse (Vanilla Wreaths)

  • 2.12 cups of flour
  • ½  a teaspoon of Carbamate
  • Vanillapowder (or 1 stick of vanilla)
  •  1.76 oc of chopped almonds
  • 7 oc of butter
  • 0.64 oc of sugar.

8 min at 392*F

Romkugler (Rum-balls)

  • 3.5oc icing sugar
  • 4.5 tablespoon cocoa powder
  • 6.17oc Oatmeal
  • 3.5oc Butter
  • (put in essence of rum, real rum or coffe for taste)
  • Roll in grated/flaked coconut.

Put in fridge until serving.

One other Danish tradition that I would like to share with you is a song that my Grandma would sing all the time when I was young – and Denise has been singing it for years~

We could never figure out the words exactly or how they were pronounced.  Pernille knew the song right away because her mother use to sing it to her.  I almost started crying – wonderful, wonderful!
