Wow! This is one easy, awesome, satisfying soup that got a thumb’s up from my teenage daughter. That is high praise my friends. She is a homemade chicken noodle soup girl. I decided to make this a strictly vegetarian dish and I am so glad that I did. No meat needed in this soup. It is plenty hearty enough. Make some biscuits to go with it and you have one delicious meal!
INGREDIENTS
2 tablespoons onion, chopped
1/4 cup orange pepper, chopped
1/4 cup green pepper, chopped
1/4 cup carrots, chopped or sliced
2 cloves garlic, minced
2 cans (14.5 ounces) diced tomatoes
1 can (15 ounce) red kidney beans with juice
1 (15 ounce) can Great Northern beans with juice
1 tablespoon white vinegar
1 cup chicken broth
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon dried thyme
1/2 teaspoon black pepper
1 1/2 teaspoon salt
3/4 cup Ditali pasta, uncooked
Combine all the ingredients in a crock pot except for the pasta (this will be added later). Cook on low for 3 hours. Reduce to low for 1 to 2 more hours. In the last 30 minutes of cooking time add pasta. Makes 9 cups.
