It’s so hot this time of year that I hate turning on the oven. However, my family was insisting upon a chocolate treat. Of course their favorite is chewy, chocolate brownies and the truth is that there are some incredible mixes out there that make this a snap. But, it’s too hot to fire up the oven so I have to get creative.
I have to tell you that I have the oldest crock pot around. It looks terrible but it works so well I cannot give it up – I’ll be buried with it! 🙂 Long story shorter – I turned my crock to high and mixed the brownie mix as directed with the eggs and oil. Then I buttered up the crock and poured in the batter.
2 hours 15 minutes later it was still a little gooey but I knew it would continue cooking so I threw on a handful of mini-marshmallow put the lid back on and turned it off. 15 minutes after that I removed the crock from the heat.
To top it off I heated up a little raspberry jam in the micro for about 10 seconds and drizzled that on a serving. The fresh mint from the garden added a nice touch of color.
So easy and so delicious that I don’t know if I’ll ever use the oven again! Just don’t try to cut these as the marshmallow sticks to everything. Just be content to scoop out big spoonfuls and then proceed to lick the serving spoon!
