Creamy Rich Avocado PIe!

Creamy Rich Avocado Pie! is so unexpected. You may think I have lost my mind. Well I have, but it is unrelated to this pie.

I know, I know it is crazy when you think about it!   But stay with me and you will be surprised at the creamy texture and bright flavors.  AND it is so easy to whip up!

It is also divinely rich and scrumptious.

Make one for your family and guests and one for yourself!!  DO it.  Eat a whole pie by yourself.  You may want to spread that over two days… just saying.

Avocado Pie

Seven ingredients and you are good to enjoy! Super easy and delightfully different.

Yes, there are only six items in the picture for you people taking notes.  The sugar and  the lemon declined to be photographed. Haha.

This picture is everything!

Creamy pies are so hard to make look good in a photo (I must have eaten three pieces before I got a half-way decent shot.) Howeva!  This shot of the creamy, sweet, addicting filling makes me so happy!  Pause for a moment of silence.

Such a pretty color too.

Do not waste too much time looking at  the filling though, as you will want to finish it up and get it in the chiller.  Life is too short to postpone the ultimate experience of tasting this pie for the first time.

Graham Cracker Crust

Serves 6

1 1/2 cups finely ground graham cracker crumbs
1/3 cup white sugar
6 tablespoons butter, melted
1/2 teaspoon ground cinnamon (optional)

Mix graham cracker crumbs, sugar, melted butter or margarine, and cinnamon until well blended . Press mixture into an 8 or 9 inch pie plate. Bake at 375 degrees F for 7 minutes. Cool.

Avocado Pie!

1 can sweetened condensed milk
1 medium- large ripe avocado
3 ounces of citrus juice – the juice of two limes and as much lemon juice as needed to get to three ounces.

Peel and mash the avocado until smooth as possible – it will have a few tiny lumps but this is fine, stir in juice.  Blend in the sweetened condensed milk  (using a small spatula, scrape the inside of the can to get all that sweet goodness – now lick your spatula :))

Pour into the cooled shell.  Refrigerate for at least 2 – 3 hours or overnight.  This pie will not get firm, it will always be a little soft and creamy.

Serve with lightly-sweetened whipped cream.  I used 1/4 cup sugar for 1/2 pint of the cream.

Add a little lemon or lime zest and enjoy!

    I have been wanting to make an avocado pie. Does the lemon juice keep the avocado a nice green or will it turn brown after a couple of days?

    • Hi Nicole, the pie stays beautifully green. Of course the longest it has latest is maybe 3 days as it is so good you want to eat it all! That picture was taken the afternoon of day 2, still perfect.
