Brown Butter Bacon Chocolate cookies will drive you mad! Oh, they look innocent enough but one bite and you will know that these bad boys are addictive and decadent and full of all the gloriously wonderful flavors you want in a cookie! And with a perfect crunch as well.

You cannot help yourself…. go ahead and eat one more.

It begins with the crunch of smoky bacon, then brown butter and more butter followed by rich, dark brown sugar and bright yellow, silky egg yolks and vanilla and…. milk chocolate, semi-sweet chocolate AND a touch of bitter chocolate…….

Snap out of it!

Brown Butter Bacon Chocolate Cookies – adapted from several other recipes

1 3/4 cups unbleached all purpose flour
1/2 teaspoon baking soda
14 tablespoons butter
1/2 cup sugar
3/4 cup packed dark brown sugar
1 teaspoon salt
2 teaspoons vanilla
1 large egg
1 large egg yolk
4 oz. semi-sweet chocolate bar, cut in 1/4″ pieces
4 0z bittersweet chocolate bar, cut in 1/4″ pieces – I use Ghirardelli 60% cocoa
3 oz. milk chocolate chips
1 cup bacon chopped into 1/4″ pieces and fried crispy!

Pre-heat oven to 375 degrees, place rack in center of oven.  Line 2 large baking pans with parchment paper.

Whisk flour and baking soda together in a medium bowl and set aside.

Heat 10 tablespoons of butter in a 10 inch skillet over medium-high heat until melted. Continue cooking, swirling the pan and stirring constantly.  Be care as the butter can burn easily.  When it starts to foam and you see the rich brown color under the foam as you stir, remove from the heat and transfer to a large heatproof bowl.  Stir in the remaining 4 tablespoons of butter until melted.

Add the granulated sugar, brown sugar, salt and vanilla to the butter and whisk until mixed well. Add the egg and egg yolk and whisk until smooth.  There should be no sugar lumps.

Let the sugar/egg mixture stand for a few minutes then whisk again.  Repeat this until the sugar is well blended and the mixture is very smooth.

With your wooden spoon, stir in the flour mixture until just combined. Stir in the chocolate pieces and the bacon.  Do not overmix!

Place a heaping teaspoon of dough in your hand and roll just a little. Place it on the lined baking sheet – on my medium sized bake pans I get four across.

Baking time will vary – usually about 12 – 14 minutes but check after 10 minutes. The edges should be browning and the center a little soft.  As with most cookies they will harden as they cool so be careful to now over cook.  Just will golden brown. Remove from heat and set the pan on a rack for about 10 minutes before removing cookies directly to the rack to finish cooling.

Leave 6 of them out for family and hide the rest!
