Saturated with the flavors of vanilla, almond, and buttermilk, these dense little scones will make their way into your heart as they improve your overall health.
Ingredients
- 1 cup all-purpose flour
- 1 1/2 Tablespoons sugar
- 1/2 Tablespoon baking powder
- 1/3 cup salted butter, cut
- 1/2 cup fresh blueberries
- 1/2 cup fresh blackberries
- 1/2 teaspoon almond extract
- 3/4 teaspoon vanilla extract
- 1/4 cup buttermilk
- 1 large egg, room temperature, slightly beaten
Instructions
Preheat oven to 400 degrees F..
Line baking sheet with parchment paper; set aside.
In a large bowl, combine sifted flour, sugar, and baking powder. Using two knives, cut-in butter until the mixture forms medium sized crumbs.
Whisk together buttermilk, vanilla, almond extract and egg and slowly pour into the center of the dry ingredients. Using a fork, blend until sticky and well combined.
On a well floured surface, knead dough, half-over itself, until it is stiff and dry (on the outside only) to the touch. Form a dome shaped ball with a slightly raised center and gently pat down with the palm of your hand,
Cut dough into eight slices, like you would a pie, and bake on center rack for approximately 20 minutes, or until tops are a light golden brown.
Serve warm and top with rum soaked blue and blackberries. Enjoy!
Tess, these sound incredible! I can’t wait to try them.
These scones look amazing! Will HAVE to try these! 🙂
Tess, I cooked up a double-batch yesterday!! I have never made scones before and they were easy to do and turned out great. I folded in fresh blueberries and baked them for 15 minutes – they were slightly brown – perfect! I found some Blackberry Brandi in the back of the cupboard and soaked the extra blueberries and blackberries for quite awhile – then served it over the scones – delicious! Oh yeah, I am talking good. Thanks for a great recipe.
