Satisfyingly Simple Banana Bread

One sultry Saturday morning in Henderson, NV not so long ago, Denise stepped into her kitchen and with a small gasp declared “OMG, these bananas look sad and need to be used up!”

So on the sly the stupendous daughter, THAT’S ME, searched and searched the iPad for sinfully sweet recipes…. To her surprise she selected a Banana Sour Cream Bread from

“How satisfyingly superb!” the daughter exclaimed, and rushed to Denise in the leap of a flame!

“Sweet daughter of mine” she said with a smile “We have 5 bananas and Greek yogurt to use.”

“That’s no match for me,” the daughter said with a sigh “we just substitute what we have, sweet mother of mine.”

 And with that came the treasure we call…

Aub’s Satisfyingly Simple Banana Greek Yogurt Bread

Dusting for the pans:

1/4 cup white sugar

1 teaspoon cinnamon


3/4 cup butter

3 cups white sugar

5 very ripe bananas

3 eggs

3 teaspoons baking soda

1 teaspoon ground cinnamon

1/2 cup of applesauce

16 oz of plain Greek yogurt

2 teaspoons vanilla extract

2 teaspoons ground cinnamon

1/2 teaspoon salt

4 1/2 cups all-purpose flour


1. Preheat oven to 300 degrees F. Grease your pans. In a small bowl, mix together 1/4 cup white sugar and 1 teaspoon cinnamon. Then dust your previously greased pans with the mixture.

2. In a large bowl ( I used a glass mixing bowl), cream butter and the 3 cups of sugar. Mix in your eggs, mashed bananas, applesauce, yogurt, vanilla and cinnamon. Stir in salt, baking soda and flour until just combined.  Divide evenly into two 9½ x 5¼ x 2½” deep dusted pans, making sure to not over fill them, it will rise when baking!  If you are using smaller pans fill on to 2/3 full.

3. The original recipe say to bake these babies for 1 hour. I however, started with 45 minutes and went in 10 minute increments from there, all in all about 60- 65 minutes depending on your oven. Poke them with a toothpick, when it comes out clean, your done!!

Let cool for 15 – 20 minutes, loosens sides and invert onto a clean baking sheet to cool.  Go ahead and take a hot slice and top with butter…. that dusting of sugar and cinnamon makes these loaves extra special!
