Rich banana-walnut flavor in a light airy muffin.
- 1/2 cup butter, softened
- 4 ripe bananas
- 1 1/2 cups all purpose flour
- 1 cup white granulated sugar
- 3/4 teaspoon vanilla extract
- 1/2 cup walnuts, chopped
- 2 eggs, slightly beaten
- 1 teaspoon baking soda
- pinch of salt
Preheat oven to 350 F.. In a medium bowl, cream together butter and sugar. Add mashed bananas, vanilla and eggs.
In a separate bowl, whisk dry ingredients. Add to creamed mixture and blend until well combined.
Line muffin cups with mini cupcake papers. Dollop 1 1/2- 2 tablespoons of batter into cup papers and top with chopped nuts.
Bake for approximately 15-20 minutes. Insert a toothpick into the middle of the muffins to test for readiness – if it comes out clean, they are ready.
Cool muffins, in pan, for 10-15 minutes before serving. Enjoy!
