Jack Scalfani’s show Cooking with Jack has had more than 6 million hits on You Tube! If you are not one of those 6 million than you better head over there and see what the fuss is all about.
What you’ll find is Jack in his own kitchen with his signature backward baseball cap wearing his The Best Barbeque Sauce apron and cooking up anything from ribs to Aunt Myrna’s cheese salad!
BeBetsy caught up with Jack recently and he was kind enough to share a little about himself AND one of his cooking videos!
When did you realize that cooking is your passion?
When I was a kid. I would rather be in the kitchen with mom while she made dinner than watching TV.
What and/or who are your major influences?
My mom! She was by no means a good cook, but she was good at making inexpensive food taste good. Very creative. She also was big into shortcuts in cooking. She wasn’t lazy but more tired and would by some precooked items to help her dinner along.
How did you come to have your cooking show?
I made short cooking tip videos to give me a reason to tell people to buy my sauces. The tips grew into product reviews and recipes and before you knew it, we were producing a show.
Is there one particular food you love to cook?
Meat. I am totally enthralled with the different qualities, flavors and effects meat has on a dish. If you put beef in spaghetti sauce, it has a totally different dinner flavor than if you put chicken in the sauce.
What’s your motto or advice to live by?
Do God’s work and he will do your work. Meaning, that if you love people and care about people and go out of your way for others, God will take care of the other things you should be doing in your life. Try it. It works.
What are the 5 things you can’t live without?
iPhone, my music, PS3, my bible, garlic (everything is good with garlic)
Last thing you cooked for yourself?
I made chicken thighs in pasta sauce. I love to sauté the chicken thighs in the olive oil and cheap Merlot wine, first. Then pour in the homemade pasta sauce over it all and simmer for 45 minutes. Mmmmmm.
Favorite food from your childhood?
Scungilli. We used to all go out to our favorite Italian restaurant and order Linguini with Scungilli. It’s the meat out of a Conch Shell. Very chewy like clams, but better flavor. We all would order it hot with lots of crushed red pepper. So good with garlic bread dipped in. It’s now very hard to find in any Italian restaurant. BTW, Olive Garden is not an Italian restaurant.
Guilty food pleasure?
French Fries, especially the garlic Parmesan bottomless fries at Red Robin.
What would be your last meal on earth and where would you like to enjoy it?
Christmas dinner: Lasagna, Anti-pasta, garlic bread, veal/beef meatballs, hot & sweet Italian sausage and rice pudding for dessert.
